Green Chili

Green Chili (recipe courtesy of Soup N Stuff For the Soul)


1-2 lbs pork roast

1 medium onion

Lots O garlic!

2 16 oz cans diced tomatoes

1 can rotel tomatoes

2 quarts of green chilies (roasted when in season)

2 Tablespoons cumin

1/4 teaspoon white pepper

1/4 teaspoon chili powder

1/2 teaspoon oregano


chicken broth


Sides:  sour cream, guacamole, chips, corn tortillas, cheese


Put pork roast in covered roasting pan ( I use my stoneware baker) and cover with water. Add 1/2 teaspoon salt. Cover tightly. Bake for 6-7 hours at 300 degrees.

After baking is complete, saute’ butter and garlic and onion in soup pot!

Shred pork and add to the onion and garlic mix with chicken broth.

Add green chilies, diced tomatoes and rotel tomatoes.

Add seasonings.


This green chili is better the next day, after all the flavors have had a chance to meld.
