Hot Artichoke Dip

Hot Artichoke Dipvolunteer firefighters in Colorado

2 cans artichoke quarters in water, drained and chopped

3 cloves garlic, minced

1 cup best quality mayonnaise 

1 cup freshly grated parmesan cheese

Mix all ingredients. Use an electric mixer for a smoother consistency, or stir by hand for a chunkier consistency. Place in a small casserole and sprinkle additional cheese on top. Bake in a 375˚ oven for 20 minutes. Serve with crackers, bread or vegetables.

    I learned about this dip from an American colleague. She made it and served it with tortilla chips. Wonderful!
